It's important to have quick, healthy meals ready to go if you find yourself in a time crunch when you're also trying to maintain or lose weight. One of my quick lunches or dinners is a Vegan Burger and Fries which I can cook in only 10 minutes using an Air Fryer.

10 minutes for a burger and fries is faster than I can run to the closest drive-order, order, pickup and scarf down on the drive back. My vegan version actually has more protein with fewer carbs and fat as well as overall calories. I do make less fries and substitute a small salad or steamed vegetables to help fill me up.

I usually make this with frozen Aldi's Empower Burger which uses pea protein and is similar to Beyond Burgers and Impossible Burgers though not exactly the same. One nice thing about the Earth Grown Empower Burger is that it has more protein than the other 2 name brands.

I could get the burger and fries to come out better if I cooked them separately in the air fryer but speed is more important than perfection in this situation. I use an Aria 3 Qt Air Fryer which I got from Home Depot. It works really well and is easy to clean. In the air fryer I can cook everything in about 10 minutes. If I was doing this in my oven it would take about 20 minutes.

It's easy to go overboard on potatoes so I always weigh them out with a kitchen scale. My Ozeri ZK14-S Pronto has seen almost daily use for years and still works great. I would highly recommend it if you're looking for a good, cheap, digital kitchen scale.

Ingredients

  • 1 Earth Grown Empower Burger Patty (or Beyond Beef or Impossible Meat)
  • 85g Frozen Crinkle Cut French Fries
  • 1 Loven Fresh 100% Whole Wheat Sandwich Skinny (or similar)
  • 1 Teaspoon Sriracha
  • 2 Tablespoons Ketchup
  • 2 Dill Pickle Chips
  • 2 Tablespoons Pickled Red Onions
  • 1 Cup Baby Spinach and Arugula
  • 6 Grape Tomatoes
  • 1 teaspoon balsamic vinaigrette

Directions

  1. Place frozen vegan burger patty in the air fryer along with the french fries, leaving plenty of room for air circulation. Cook for 5 minutes at 400 degrees F.
  2. Dress the bottom of the bun with the sriracha sauce, ketchup, spinach and arugula, pickle chips and pickled red onions or whatever toppings you'd like.
  3. Make a small side salad with spinach and arugula (or other salad greens), some grape tomatoes, pickled red onions and a light balsamic vinaigrette.
  4. After 5 minutes flip the burger patty, toss the french fries and cook for another 5 minutes in the air fryer.
  5. After the second 5 minutes, check the burger temperature. Like a beef burger you're looking for an internal temp of about 165F degrees. The burger should have browned on the outside, fat should be sizzling on top and the fries should be crispy.
  6. Add the burger to the bottom of the bun and top with the other half of the bun. Plate the fries and add some ketchup.
